This has been our new favorite chili this year. It would be great for the Superbowl on Sunday!
Mexican Chili
1 lb. ground beef
1 onion, chopped
28 oz. diced tomatoes (2 14oz. cans)
15 oz. canned kidney beans
17 oz. whole kernel corn with juice
8 oz. tomato sauce
1 package of taco seasoning mix
3 cups vegetable stock
Brown ground beef and onion. Drain fat. Add remaining ingredients. Simmer for 1 hour. Serve with shredded cheese, sour cream, and/or tortilla chips.

ReplyDeleteI use a similar recipe except using black beans. Its DELICIOUS! And no bad aftermath lol. Kidney beans + my husband = super stinky.

TRUE mexican chili has no beans... just thought u should know. but it does sound delicious.
