Today I'm sharing a recipe for an easy southern favorite- Cherry Layered Pudding Delight. You can make this in any flavor you like - just substitute a different flavor pie filling.
I'll go ahead and warn you- this is a sugar-filled, all processed food dish. But it's so good. My mother has made this for years. A little indulgence won't hurt once in a while. I did attempt a remake of this in chocolate with homemade pudding and real fruit on top that I'll be sharing at some point on my blog if you want to know how to make it a little healthier, (or less unhealthy).
Below are the ingredients:
14 whole graham crackers
1 package vanilla instant pudding (6 ounce)
2 cups milk
1 cup whipped topping
1 can cherry pie filling (21 ounce)
Prepare pudding with milk as directed on package. Let stand 5 minutes. Blend whipped topping into the pudding.
Line a 9 inch square pan (8 inch will work too) with whole graham crackers. Break some of them if you have to to fill the bottom.
Spread half of the pudding mixture over the crackers.
Repeat with crackers and pudding.
The top layer is supposed to be crackers, but I ended up with pudding on top. It's just as good this way.
Spread pie filling on top of crackers (or pudding if that's where you stop). Chill for three hours in the refrigerator. Enjoy!
Yum!! I don't think this will help my post-baby figure, but it does have cherries so it's kind of healthy, right?!?! Thanks again for sharing, Fonda!
